I've got a spare coil pack that came out of my old 2nd gen 'scort before it was scrapped. and I was thinking of offering it up for sale.

My question is, How do I SAFELY test it to ensure that it's worth selling?

You could install it on your car and see how it runs. It just takes a few minutes. Even a tired coil will work though. If it works, just list it as an original coil so the buyer doesn't have any misconceptions.

I know it WORKS, as the car was running until it was scrapped. I'm just not sure how well.

check the resistance with an ohmmeter

+1 on testing the resistance. Coil packs are one of the few things that rarely give problems.
