Tell us which ones you are missing. We would also need to know if yours is an LX (SOHC) or a GT (DOHC). The best source would be a junkyard, and the fasteners dont have to come from an Escort. Any small car made in the last 20 years is likely to have similar nuts and bolts. All of the ones on your Escort would be metric.
I have never seen a list of individual nuts and bolts in the service manual, but with a few caveats, most of them would be available from a good hardware store. Typically the ones on the car will be the kind with flanged heads. They are all metric of course. The hardware store bolts may not come in the same lengths. They typically are in what the hardware store considers 'standard' lengths, while the ones on the car might be slightly longer or shorter.
I have also gotten bolts and nuts from rockauto(dot)com. You click on the link at the top of the home page for "tools and universal parts", and poke around until you stumble on listings showing bolts/nuts. Most of the parts are made by Dorman, and commonly come in boxes of 8 or 10 or 20, depending on size.
Any auto parts store should be able to order in the Dorman parts, but they would not have listings specific to your Escort; rather they would be listed by size, thread pitch, length, etc.

I have boxes of spare bolts at home - but I dont care to share. Some of them are no-standard, and not so easy to find.
