Somehow, while replacing the electric wing mirror on my 1997 Escort (driver's side), I noticed a scraping sound and found that the door panel has been hitting the front fender. I am suspecting that somehow the door alignment is off. So, how does one go about re-aligning the door?

BTW, I checked the Haynes Repair Manual and the picture does not match what I have.

I had that happen on my Tracer and I simply loosened the bolts on the
fender and repositioned it. Retightened and problem solved.

It can also mean the fender is shove back a bit or out of position. One scheme is to put a thin wedge of wood into the gap, and use the wood to maneuver the fender to as not to hit the door.
